My auntie's signature cake. Fluffy ever so soft sponge cheescake. Now that she's half a world away, we'll have to fend for ourselves.
Ingredients:
Susu UHT (Fresh milk) 60g (1/3 cup)
Cream cheese (philadelphia) 160g
Butter (Buttercup) 35g (2.5 tbsp)
Super fine flour 25g (1/4 cup)
Corn flour 25g (1/4 cup)
Egg yolk 80g (3 large eggs)
Egg white 160g (5 large eggs)
Castor sugar 90-100g
Garam 2g (1/3 tsp)
Method:
1. Double boil butter, cream cheese and milk until no lumps.
2. Dah smooth, keluarkan & masuk egg yolk dan kacau perlahan2.
3. Then mix in flour (SF & CF). Sieve dulu!
4. Make meringue: Whip egg white, salt and sugar until soft peak consistency.
5. Add cream cheese mixture into meringue and fold with spatula.
6. Prepare 7"x7" baking tray. Bawah sekali letak 2 lapis grease proof paper. Side of tray sapu butter sikit.
7. Tuangkan mixture. Hentak 2-3 kali to get rid of bubbles.
8. Pre-heat oven to 150C (300F) for 10 minutes.
9. Steambake for 50-60 minutes until golden brown.
10. Once keluar, terus terbalikkan and remove grease proof paper. Terbalikkan balik and terus letak dlm kotak.
Tips:
1. Must not open oven in first 30 minutes, at least!
2. Must not let cake cool down drastically (box it!).
