Nasi Tomato

Had a great Saturday evening with the Khans. Took the boys splashing around the pool followed by dinner - menu: Nasi Ayam! Then topped it off with game night & me winning at Settlers of Catan. Must've been beginner's luck! =)

Ingredients:
1 whole chicken
1 kg white rice
Dried chillies
Tomatoes
Cucumber
Onions, garlic, ginger
Bunga cengkih
Bunga lawang
Kayu manis
Tomato puree
Chilli sauce


How To:

1. Boil chicken with some ginger (2") until half cooked. Take the soup to cook the rice with.
2. Blend together 1 big onion, 2 ulas garlic, 1 tomato. Add in 1.5" cinnamon stick, 5 bunga cengkih, 5 bunga lawang. Add in the chicken soup and 1 cup tomato puree. Cook the rice with this mix and add aome salt once the water has boiled.
3. Fry the pre-boiled chicken till half cooked.
4. Blend 10 dried chillies, 2 tomatoes, 1 big onion, 2 ulas garlic & halia 0.5". Fry this mix until cooked. Then add the chicken. Add salt, sugar & water as needed.
5. For the cucumber salad, mix sliced 1/2 onion, 2 cucumbers, chilki sauce, sugar & salt.

Daging Bumbu Lapis

Bahan-bahan:
Daging dipotong nipis2 500g
Telur 1 biji
Planta/Butter 1 tbsp
Bawang putih 2 ulas
Halia & kunyit (1 & 1/2 pinky)
Lada putih
Kicap manis
Gula & garam

Cara-cara:
1. Tumbuk bawang putih, halia & kunyit sampai halus. Tambah lada putih.
2. Gaul bersama daging. Tambah telur, planta, kicap , gula & garam.
3. Tambah sedikit air & rebus sehingga daging empuk (tutup).

Bergedil Daging

Bahan-bahan:
Daging kisar 500g
Kentang 500g (1 biji besar)
Daun sup
Daun bawang
Bawang goreng
Telur 2 biji.
Bawang putih 2 ulas
Lada putih
Garam

Cara-cara:
1. Potong2 kentang & goreng.
2. Lenyek2 kentang - blend pun boleh!
3. Gaul bersama daging kisar. Tambah telur 2 biji, daun bawang, daun sup, bawang goreng, bawang putih (ditumbuk) & serbuk lada putih, dan garam secukup rasa.
4. Gaul sehingga rata, kepal2 jadik shape & size menurut selera. Goreng!

Ayam Goreng Rempah

Ingredients:
Ayam 1/2 ekor
Lengkuas (3 jengkal)
Serai (2 batang)
Halia (1 jengkal)
Bawang putih (4 ulas)
Kunyit (1/2 pinky)
Asam jawa
Garam & gula

Cara-cara:
1. Blend lengkuas, serai, halia, bawang putih & kunyit.
2. Gaul bersama ayam. Tambah air asam jawa, gula & garam.
3. Rebus ayam & rempah sehingga ayam separuh masuk.
4. Asing & drain ayam & rempah.
5. Goreng ayam (bertutup supaya lembut).
6. Kemudian goreng rempah berasingan (tanpa tutup).

Kuih Cara

Siti used to make these a lot. And my boys love it. (So do I!)

Ingredients:
1 cup tepung gandum
1 biji telur
100 ml santan pekat
2 daun pandan di-blend & tapis
(or 1/2 tsp essence pandan)
Gula, garam & air secukupnya

Cara-cara:

1. Belnd daun pana=dan, tapis & ambil airnya.
2. Campur bersama tepung gandum, telur, santan, garam & air secukupnya.
3. Blend campuran tadi dan siap untuk dibakar!
4. Tuang campuran kuih ke dalam acuan, dan masukkan gula sebagai inti.

Tip:
1. Tutup acuan kuih cara sehingga masak!

Basil Fried Rice

Another thai inspiration. Thanks to the many2 basil leaves we still had in the fridge. We've been using them for our stirred fry ground beef & Achik's ayam richa-richa.

Ingredients:
Ayam
Basil leaves
Jalapeno/Serrano peppers (or cili padi)
Bawang putih
Sos tiram
Kicap manis
Telur 2 biji

1. Goreng telur ala scrambled eggs (add sikit garam) & asingkan
2. Tumis bawang putih + cili yg ditumbuk
3. Masukkan ayam + sos tiram + kicap dan goreng hingga masak
4. Masukkan nasi dan kacau
5. Lastly, masukkam telur goreng & daun basil

Kek Batik

This one goes out to my dear sis.. Angah Elle! Here's the kek batik recipe you've been asking for:

1 peket biskut Marie
1/2 tin susu pekat manis
1/2 cawan milo
1-1/2 sudu koko
1 tin air suam
3 biji telur
1/2 buku buttercup

1. Pukul telur sampai kembang
2. Masukkan bahan2 & kacau atas api
3. Once masak, padam api.. then masukkan biskut yg dah dipatah2kan & kacau!
4. Padatkan in tupperware and then masuk fridge!

1 Oct 2011 - Last night we had dinner at K.Mie's. Here's her variation on Puding Batik (I like!)

Puding Batik K.Mie

250g butter
250g milo
200ml air
~250ml pekat manis (just use 30 keping biskut marie (slightly more than one bungkus)

Popiah Goreng

We went to a Thai place for lunch and they served us veggie egg rolls, which Idris absolutely loved. So I got inspired to make some popiah goreng for minum petang..

Bahan2:
Kulit popiah readymade
Carrot
Taugeh
Taufu/Kobis
Daun bawang

1. Tumis bawang putih tumbuk & white pepper sampai nak bau
2. Masukkan bahan2 inti dan garam & gula secukup rasa
3. Masukkan inti dalam kulit popia. Celup jari dgn sedikit air untuk gam popiah
(kalau tak melekat gunakan sedikit tepung gandum dicampur air)
4. Goreng & hidang sewaktu masih panas

Kuah popiah: Sos cili + gula + gatam secukup rasa

Nasi Ayam Madu

Ed & Jin came over to visit one Sunday. Menu for the day.. nasi ayam!

Bahan-bahan:

Untuk Nasi & Sup:
2 helai daun pandan (optional)
2 kiub ayam
1 ekor ayam
2 sup bunjut adabi
Bawang putih
Bawang merah
Halia
Kayu manis (optional)
Marjerin
Daun bawang
Daun sup

Untuk perap ayam:
Madu
Kicap
Sos tiram
Serbuk lada putih
Halia
Bawang putih

Kicap:Bawang putih, sos tiram, kicap manis/masin, sup ayam

Sambal: Cili merah, bawang putih, halia, perahan limau, sup ayam

Sayut: Daun salad/timun/tomato



1. Tumbuk bawang putih dan halia. Tumis dengan sedikit minyak sehingga bawang jadi perang. Masukkan air, ayam, sup bunjut dan kiub ayam. Masaklah sehingga ayam separuh masak.

2. Ayam tadi diperap dgn: halia, bawang putih, madu, sos tiram, kicap manis & pepper.

3. Untuk masak nasi, tumiskan bawang merah, bawang putih, halia & kayu manis dalam marejerin sampai wangi. Kemudian gunakan sup ayam tadi (variation + daun pandan if tak pakai kayu manis). Bila mendidih tambah garam & kacau supaya rata. Lepas nasi dah masak, kacau lagi supaya mixed.

4. Roast ayam @ 375F for 20 minutes, then 300F for another 10 minutes.

5. Untuk kuah sup, tumbuk bawang putih, bawang besar & ketuk halia. Tumis sampai naik bau. Kemudian tambah air, sup bunjut &kiun ayam , garam & gula secukup rasa. Bila mendidih, tutup api & masukkan daun bawang & daun sup.

6. Tumiskan bawang putih sehingga naik bau. Masukkan kicap manis, kicap masin, sos tiram dan sedikit sup ayam tadi.

7. Untuk sos cili, blend cili merah, bawang putih & halia, bersama garam, gula, perahan limau & sup ayam tadi.

Cream Puffs

This was the day our cheapo mixer broke. Am now waiting for my Cusinart stand-mixer. Yippiee..!!

Puff Ingredients:
Unsalted butter 145g (10 tbsp)
Water 250ml
Salt 2g (1/4 tsp)
High protein flour 200g
Egg 285g (7 large sized)

Puff Method:
1. Pour water, salt & butter into a bowl and heat.
2. When liquid starts boiling, add flour and stir.
3. Transfer mixture into a mixing bowl and mix.
4. Add egg, GRADUALLY, to prevent curdling.
5. Mix until get a smooth texture.
6. Scoop out into piping bag and pipe out atas tray.
7. Make sure ada gerase proof (teflon) paper atas tray or sapu sikit butter.
8. Bake at 200C for 20-25 min.

Cream Ingredients:
Instant custard 100g
Water 250ml
Whiping cream 75g

Cream Method:
1. Kacau instant custard & water. Mix!
2. Pukul whipping cream until reach soft peak consistency.
3. Then mix together!

Tips:
1. Jgn buka oven selalu! Leave it for 20 min at least.

Ayam Richa-Richa

Bahan-bahan:
Ayam 1kg dipotong kecil2
Daun kemangi / Daun basil
Halia 1.5" Kunyit 1 "
Bawang merah kecil 4 biji (shallots)
Bawan putih 4 ulas
Cili padi 10 - 15
Lengkuas 1 "
Serai 1 batang
Kicap manis
Gula & Garam
Lada putih

Cara-cara:
1. Blend bawang putih, bawang merah, cili padi, halia, kunyit.
2. Tambah pepper, garam & gula secukup rasa.
3. Ketuk serai & lengkuas.
4. Tumis semua bahan2 dia atas sampai naik bau.
5. Masukkan ayam, tambah seidkit air, tutup hingga ayam empuk.
6. Kacau, masukkan kicap manis & daun basil/daun kemangi.

Sponge Cheesecake

My auntie's signature cake. Fluffy ever so soft sponge cheescake. Now that she's half a world away, we'll have to fend for ourselves.

Ingredients:
Susu UHT (Fresh milk) 60g (1/3 cup)
Cream cheese (philadelphia) 160g
Butter (Buttercup) 35g (2.5 tbsp)
Super fine flour 25g (1/4 cup)
Corn flour 25g (1/4 cup)
Egg yolk 80g (3 large eggs)
Egg white 160g (5 large eggs)
Castor sugar 90-100g
Garam 2g (1/3 tsp)

Method:
1. Double boil butter, cream cheese and milk until no lumps.
2. Dah smooth, keluarkan & masuk egg yolk dan kacau perlahan2.
3. Then mix in flour (SF & CF). Sieve dulu!
4. Make meringue: Whip egg white, salt and sugar until soft peak consistency.
5. Add cream cheese mixture into meringue and fold with spatula.
6. Prepare 7"x7" baking tray. Bawah sekali letak 2 lapis grease proof paper. Side of tray sapu butter sikit.
7. Tuangkan mixture. Hentak 2-3 kali to get rid of bubbles.
8. Pre-heat oven to 150C (300F) for 10 minutes.
9. Steambake for 50-60 minutes until golden brown.
10. Once keluar, terus terbalikkan and remove grease proof paper. Terbalikkan balik and terus letak dlm kotak.

Tips:
1. Must not open oven in first 30 minutes, at least!
2. Must not let cake cool down drastically (box it!).

Ayam takPenyek Achik Siti

I first had ayam penyet in a little Singapore cafe, pregnant with Ammar.
This is not it.

Ayam:
Tumbuk kuyit, halia, bawang putih & garam untuk ayam goreng. Goreng covered, so lembut!

Sambal:
Version1:Tumis bawang merah, cili padi, tomato, belacan, gula & garam. And then tumbuk.
Version2: Tumbuk dulu the above ingredients, and then goreng - Much cleaner version!

Sayur:
Kobis putih, timun, kacang panjang or kangkung dicelur

Add-ons: Tempeh goreng (add garam),ikan masin, telur masin
